I would be content in a world that serves all its meals and snacks in the form of grazing platters. It does seem as though summer is especially prone to serving food in that manner, and this whipped basil ricotta platter is one such example of endless customizations. The ricotta is simply flavored with fresh basil, lemon zest, and a healthy dose of olive oil. Cantaloupe or melon paired with bresola is also a height-of-summer classic combo, and the finishing touches include perfectly toasted thinly sliced sourdough baguette and pickles.
Ingredients:
For the ricotta:
250g ricotta
small handul fresh basil leaves
1 lemon, grated zest only
salt
2-3 Tbsp olive oil
For the platter:
1/4 ripe melon, cubed
100g bresola, ruffled
1 sourdough baguette, thin slices toasted
pickles and olives
Method:
In a mini food processor, blitz the ricotta ingredients until whipped and incorporated. Pour into a serving bowl and place bowl in the middle of your grazing platter. Arrange the rest of the ingredients around the bowl and serve.
