2031. Charcuterie Paste

This spreadable paste has all the essential elements of a charcuterie board, blended up. It's got the cured meat, cheese, cornichons, and extra added flavors in the form of seeded mustard and onion. Serve with snappy crackers and a fizzy fruity iced drink, and you're all set for a no-cook summer dinner.


Ingredients:

200g Italian dry salami or French saucisson
170g Gouda or Cheddar cheese, diced
1 medium shallot, diced
1/3 cup cornichons, drained
2 Tbsp grainy mustard
1/2 tsp coarse cracked black pepper
Crackers, for serving



Method:

Place the chopped salami, cheese, shallot, cornichons, mustard and black pepper in a food processor. Blend on high until chopped through and a paste forms. Transfer to an airtight container and chill for at least 1 hour. Serve with crackers.
