There seems to be a trend to smash everything, these days. These smashed felafel tortillas are a fantastic alternative to a classic felafel sandwich. Raw felafel mix is spread over one side of a tortilla then lightly fried face down until cooked through and becomes a delightful crispy golden brown. Serve with all the trimmings, we are team toum over team tahini here. Some restaurants sell their raw felafel mix by the half kilo which is a good way to make this an express semi-homemade meal.
Ingredients:
mini tortillas
raw felafel mixture
olive oil, to shallow fry
turnip pickles, to serve
toum sauce, to serve
Method:
Spread some raw felafel mixture on one side of the tortillas, pressing down to make sure it adheres, to about 1cm thick. Heat some oil in a pan and lightly fry the tortillas, felafel-side down, until cooked through and a crispy golden brown. Flip and let cook for a minute more on the other side.
Serve hot with all the trimmings, such as turnip pickles and toum sauce.
