These green beans are blanched then treated like a salad: dressed in a pesto lemon vinaigrette. To keep their vibrant green color, the beans are plunged in boiling water for 5 minutes then directly into an ice bath.
Ingredients:
500g fresh green beans
2 Tbsp pesto
1 lemon, juice
salt and pepper
2 Tbsp olive oil
Method:
Clean and trim the green beans. Plunge in a pot of boiling water for 5 minutes then transfer directly in a bowl of iced water. Make the dressing by combining in a jar the pesto, lemon juice, salt, pepper, and olive oil and shaking well. Drain the greens from the ice water, dress with the sauce and serve immediately.
