1855. Twice Baked Potato Gratin

It's always irritating and frankly embarrassing to serve a potato gratin that's been cooking for hours and still have a bite to it when it's supposed to be thoroughly tender. Baked sliced potato with a cup of water in the same dish they will be fully cooked in allows them to steam before adding the cream and other ingredients.

I probably should have posted this a while ago but I wanted to see if it works, and glory be to Allah, does it work! Oregano oil turned out to be this miraculous anti-viral, anti-microbial, anti-inflammatory natural powerful remedy few people know of. 

1853. Mushroom Garlic Steak Bites

A perfectly seared steak is always a pleasure, but somehow there is a pressure associated with it that is completely dissolved when making steak bites. These steak bites are a cubed ribeye seared in a pan with garlic, thyme, and mushroom. 

1852. Cornflakes Brittle

This is a fun candy to make with kids. I honestly thought it would turn out better than it did, but it was enjoyable while it lasted. 

1851. Eggnog

Eggnog is a famous winter drink that is hyped up during the end of year holidays. Turns out, all this drink is, is a diluted egg custard flavored with nutmeg. 

1850. Airfried Olives and Haloomi

Somehow, the options for favorite cuisines seem to be limited to French or Italian. I seriously disagree. Arab cuisine has to be the most varied and delicious one. Maybe I am just biased. This simple mix of haloomi cheese, olives, and a few other Arab pantry staples is a fantastic example of how nutritious and delicious Arab cuisine may be. 

1849. Smeagol Eggs

I made a promise to my niece to call this recipe Smeagol Eggs. If you know, you know. But if you don't know, well, Smeagol from LOTR would sneak up on bird nests and drink the eggs. Not the most delicious analogy, but I can promise that these runny eggs are a family favorite. 

1848. Syrian Pumpkin Yogurt Stew

I could not get a pretty picture of the stew, but its character more than makes up for its lack of beauty. This Syrian pumpkin yogurt stew is such a cozy and heartwarming dish for the winter, especially for us Arabs who love yogurt-based dishes. 

1847. Salt Fudge Toffee

The end of year brings candy and baking recipes galore. This salted fudge toffee is so moreish in the winter, but honestly might be the same year-round. 

1846. Arayes Sprial Skewers

Arayes is a classic Arabian snack, and presenting them as spirals on a skewer is novel and innovative. I served it with a side of kefir ranch dip, and it was delicious.
