2067. Seared Dates Rice Pudding Custard


Yes, I just posted a seared date rice pudding, and yes, this is another seared date rice pudding, but give it a chance. This version is studied to feed your soul and body. How? I'll tell you. Besides the surface level comfort of a steaming bowl of spoonable carbs to sooth the soul, this rice pudding incorporates multiple factors to optimize nutrients consumption as well as comfort. First, cooled rice is used. This matters because cooling cooked rice transforms the type of carbohydrate to a resistant starch (look it up). Secondly, the pudding is further thickened using egg yolks, not cornflour, which boosts choline intake (look it up). Sure, you can use ugar, but natural sweeteners such as maple syrup of honey make it even better for you.



Ingredients:

4 cups cooked and cooled rice
1 cup cream
1 cup milk
1 cup water
pinch salt
1/3 cup maple syrup or sugar
1/3 cup powdered milk
4 egg yolks
seared medjoul dates




Method:

In a pot, combine the rice, cream, milk, water, salt, sugar, and powdered milk. Cook until steaming and thick. In a bowl, add the egg yolks. Temper them by whisking with a ladleful of the steaming rice mixture, then add the lot back into the pot of rice, stirring continuously until even thicker. Serve hot, topped with the seared dates.
