2079. Saj Bread Zaatar Cheese Boats


Zaatar, cheese, and tomato on some form of bread is a classic. This recipe just presents it differently. It has become such a favorite that I bulk freeze them and bake as needed throughout the week. Saj bread is paper this bread that gives the most satisfying crunch when toasted. Imperative for this recipe. I also like to add a spoonful of chili marinated olives sometimes. It is *chef's kiss.*



Ingredients:

saj bread
zaatar
olive oil
mozzarella cheese
cherry tomato
chili marinated olives, optional


Method:

Cut each saj bread into four equal quarters. Sprinkle lightly with zaatar and drizzle also lightly with olive oil. In the center, place some cheese, optionally top with the olives, add another layer of cheese, then top with halves cherry tomatoes. Starting from the outside edge and working towards the pointed corning, loosely but firmly roll the bread to snuggle against the filling. Carefully fold the two extremes of the roll around the filling to enclose into a boat. At this point you can freeze if making in bulk, or proceed to directly bake in a preheated 380F oven for about 15 minutes until golden, crisp, and bubbly.
