2073. Iraqi Haraq Isbao in Onion and Broth


The third and last version of Iraqi Haraq Isbao which can be vegetarian or full on carnivore, and is more known to be "poor family" food that's cheap yet fills the bellies and warms the soul is this meat broth and onion one. This comes after the tangy tamarind version and the tomato curry one.Remember to use stale dry Iraqi tannour bread. If only fresh is available, speed up the process by drying it out in a low temperature oven.



Ingredients:

2 dry stale Iraqi tannour bread
olive oil and butter
2 large onions
salt and pepper
4 cups meat of chicken broth
sumac, to finish
clarified butter, to serve
fresh lemon, to serve


Method:

In a bit of olive oil and butter, saute the onion until a crispy golden brown.
Break the stale bread to bite-sized pieces and add to a large rimmed serving dish. Ladle over it the steaming hot broth slowly, allowing the bread to absorb it as you ladle. When all the broth has been ladled and absorbed, spoon the golden fried onion over the bread, and an optional sprinkling of chili flakes and sumac. Heat the clarified butter (half cup or more) then pour it over the top so it sizzles and spits. Serve immediately with fresh lemon slices so everyone can burn their fingers.
