As simple as it gets, this soup is barely more than cauliflower, cumin, and cream. The usual sauteed onion amp up the flavor, and while the cumin is technically optional, it does transform the dish, which is why it gets included in the title.
Ingredients:
2 Tbsp olive oil
1 onion, chopped
1 cauliflower head, into florettes
1 tsp cumin powder
salt and pepper
6 cups water
3/4 cup cream
Method:
Saute the onion in olive oil until soft, add the cauliflower florettes and cumin and saute for 5 minutes more. Add the water, and bring to a boil. Reduce heat and simmer uncovered for 25 minutes, until the vegetable has gone really soft. Use an immersion blender to puree to a smooth soup. Re-heat and adjust seasoning with salt and pepper as necessary. Stir in the cream just before serving to avoid boiling it with the cream. Serve with an extra drizzle of olive oil.
