817. Baked Potato Bar
It was so much fun preparing this serve-yourself baked potato bar. The only cooking involved (unless you make your own pulled meat or shawerma) is baking the potato, which is as easy as wrapping in foil and throwing in an oven. All the rest is prep work.

816. Jamaican Jerk Chicken with Mango Salsa
What a successful dish this was! I could probably write a book on 365 Roast Chicken recipes for every day of the year and not tire. Jerk chicken is a Jamaican concoction, and what makes it a jerk is its marinade. The contrast between the intense savory chicken and the freshness of the mango salsa is phenomenal. It might seem weird, but it so works.

815. Strawberries in Cream Cheese Frosting Dip
Eid Al-Fitr Mubarak to all my Muslim brothers and sisters in the world.
If you have ever gone to a fair in the height of Summer and bought a punnet of fresh strawberries to dunk in sugar or cream, you will certainly appreciate this dessert. A bowlful of ripe, red, sweet-tangy strawberries served alongside some whipped cream cheese frosting to dip at your leisure is a must when these berries are in season.

814. Tomato Confit on Tomato Rice
Tomato confit on a bed of tomato rice might be a tomato hater's worst nightmare, but for anyone else it's a game changer. Never has a meatless meal (vegan no less) been so intensely and acutely flavorsome.

811. Iced Coffee Cubes Latte
Barely a recipe, this is a life hack. For all the coffee lovers out there, this is a new way to enjoy your drink chilled in the hot Summer months. Coffee cubes are made by freezing your regular coffee (drip? instant? espresso?) in an ice cube tray, pile the cubes in a tall glass and splash your type of milk over it.

810. Spinach Cottage Cheese Pie
The combination of spinach and some form of pastry is a favorite of mine. Add some cheese, and few could resist. See: Greek spinach rolls, salmon spinach quiche, and plain spinach quiche.

809. Frozen Berry with Hot White Chocolate Sauce
Few desserts qualify as impressive, delicious, fast, and easy at the same time. This near-instant dessert is dinner-party quality, and leaves room for personal preferences.

Spirulina: What Is It?
I was inspired by the wonderful folks at Nuts.com to share a non-sponsored infographic about a superfood called Spirulina. I have been curious about spirulina for a while now and want to start adding it to my smoothies for added nutritional benefit. It is very rich in protein and antioxidants, and is included in the diet of astronauts to keep them healthy and strong!
If, like me, you have never heard of spirulina, this infographic will help get you acquainted.
