Eton Mess is a British classic dessert comprising of whipped cream, crumbled meringues, and fresh strawberries. A couple of years ago I did my take on it, Arab-izing it by using pomegranates. This creative version uses ice cream instead of whipped cream, making it the ultimate Summer dessert. It is fresh, sweet, creamy, with just a little zing. Note that this must be made just before serving to get that perfect ration of soft ice cream to dribbly bits and must be consumed completely within twenty minutes. Freezing the dessert will freeze the fresh strawberry into unpleasant little stones making it difficult to eat.
Ingredients:
200g strawberries
200g meringues
250g strawberries & cream ice cream
250g vanilla ice cream
3-4 Tbsp cream
Method:
Remove your ice-cream from the freezer and let sit at room temperature to soften a bit while you prepare the rest.
While the ice cream is resting, roughly chop up the hulled strawberries and meringues and put in a bowl. Scoop out the ice cream and also chop it up roughly, add to the strawberry bowl, toss to incorporate, and pour into the serving bowl. Drizzle the top with a little cream and serve immediately.
