2060. Quick Turkish Meat Borek


Who doesn't love a good warm hearty borek? Usual flavors are meat and cheese, but potato stuffing is also traditional, and cooks are getting creative with infinite stuffing options. Skip the tedious layering and get this dish done and dusted in minutes.



Ingredients

1 pack Phyllo pastry, room temperature

Meat mixture:
500g minced meat
Olive oil
1 onion
Salt pepper
Parsley

Liquid mix:
1 cup full cream milk
2 heaped Tbsp Greek yogurt
1/2 cup olive oil
2 eggs

For topping:
Sesame seeds
Nigella seeds
50g melted butter



Method:

Preheat your oven to 350F.
Cook meat, onion, salt and pepper in olive oil. Cool, add chopped parsley.
Make your liquid mix by whisking well all the ingredients, set aside.
Slice your roll of phyllo into 1cm pieces, carefully unravel your phyllo coils so you end up with ribbons of phyllo.
Oil your tray (approx 25-30cm) & spread half your phyllo, don’t push down just fluff it up & leave it looking rustic. Spoon over half the liquid mixture.
Add the meat mix layer, again don’t push down, just let it naturally settle over the phyllo. Place the rest of the phyllo over the cheese.
Spoon over the rest of the liquid mixture, and brush over the melted butter. Add the sesame/nigella seeds & bake uncovered for around 35-40 minutes or until golden & crispy.
