Come to think of it, bland food coming from the West is mostly depraved in flavor and nutrition. Our "ethnic" foods pack punches of flavor and is truly nutritious, feeding body, mind, and soul. This Lebanese potato salad is one such example, going bold in the garlic, mint, lemon, and olive oil.
4 to 5 medium potatoes
1/2 cup olive oil
4 garlic cloves
2 lemons (zest & juice)
1 Tbsp dried mint
salt & pepper
Method:
Peel the potatoes and boil until they’re fork tender. While the potatoes are boiling, combine the olive oil, fresh grated garlic, the zest and juice of a lemon, dried mint, salt, and a dash of pepper. Drain the potatoes and lightly mash into small chunks. Add in the dressing, and toss with the potatoes until well combined. Plate and serve immediately to enjoy it hot, or chill and serve cold as the perfect summer BBQ side dish.
