2049. Sujuk Shawerma Sandwich


This homemade sukuk shawerma sandwich is so delicious I can have it for lunch for a week straight. It adopts the same technique used in the viral doner kebab I posted a while back, where the meat is thinly rolled into a parchment paper and baked. Not to be missed.




Ingredients: makes 4 sandwiches

500g minced beef
2 cloves garlic, grated
1 heaped Tbsp hot pepper paste (or tomato)
1 Tbsp white vinegar

Spices:
2 tsp paprika
1 tsp garlic powder
1/2 tsp black pepper
1/2 tsp coriander
1/2 tsp allspice
1/2 tsp fenugreek
1 tsp salt

For 4 large sandwiches:
4 pitas or saj bread
Garlic toum spread
Pickles
2 tomatoes



Method:

Combine mince, garlic, pepper paste, vinegar, and all the spices very well until it forms a paste like consistency. Divide mixture into 4. Roll out each portion between two pieces of baking paper until very thin. Remove the top baking paper, then roll into a log. Repeat with the remaining three portions.
Place in a baking tray and bake at 450F preheated oven for 12min only. Carefully unravel the baking paper, tear the meat into pieces and mix through its juices. Return to the over for 5-10 more minutes to crisp the shreds up.
To serve, spread the toum in the middle of your flatbread, top with the hot sujuk shreds and pickles and tomato slices. Roll up the sandwich and sear in a hot pan, starting seal side down, to toast the sandwich. Serve right away.
